Even though I didn't know of his passing until after I fixed & ate this feast - I'm dedicating this meal to him. He would have loved it...
Baked Mahi with red potatoes & onions; squash, onions & bacon & fresh tomatoes.
I prepared the fish with a mayonaise, horseradish, lemon spread (take-off of the old Hatteras way of preparing Drum). The horseradish was dug & prepared the night before I used it. It was pearl white. Mixed w/the mayo & lemon it was delicious.
Olive oil on the filet, a little of bit of Tony C's, and some sea salt. Then I covered the filet with a thick slab of the horseradish spread. Topped w/thick sliced bacon. Baked in the oven, covered, at 375 for 35 minutes. Removed cover & cooked 15 more minutes till the bacon was crisp on top.
The red potatoes were cut into small pieces along with a vidalia onion. I put in a bowl w/more olive oil & seasoned with sea salt, fresh thyme & rosemary from the garden. Then filled in the empty space of the baking pan.
This was by far the best ever baked fish I've prepared to date...Enjoy
